A unique encounter between spirituality and gastronomy took place on March 20 at Barro Cocina. In an architectural setting that converses with nature—stone, wood, and the light of sunset—the dinner fused Buddhist serenity with local culinary creativity.

The Essence of Jeong Kwan

The central figure was Jeong Kwan, a Korean Buddhist nun internationally recognized for her temple cuisine and her appearance on Chef’s Table (Netflix). From Chunjinam Hermitage at Baegyangsa Temple, she promotes a vegan and deeply spiritual gastronomy, conceived as an act of meditation, respect for nature, and sustainability. Her philosophy rejects waste and seeks harmony between body and mind, with no presence of ego in the kitchen.

Two Chefs, One Dialogue

Together with host chef Diego Salvador, they created a menu of appetizers, four main courses, and dessert, paired with wines from Dragonback Estate. It was a true “wordless conversation” between two worlds, expressed in plant-based textures, fragrant ferments, and profound broths. At Barro, the earth, the sun, and the mountains inspire a seasonal cuisine that connects with what is essential and elemental.
